the theme of today's baking was BUTTER!
first up - chrismas cookie #6: pecan sandies. i like these because you can put the whole batch on one sheet pan because they do not get any bigger while baking. plus, they are dipped in powdered sugar while warm, and that is never a bad thing!

1 cup butter 2 tsp vanilla
1/3 cup sugar 2 cups flour
2 tsp water 1 cup chopped pecans
cream butter & sugar. add water & vanilla; mix well. blend in flour & nuts. chill 4 hours. shape into balls or fingers. bake on ungreased cookie sheet at 325 degrees about 20 minutes. remove from pan; cool. roll in confectioner's sugar. makes 3 dozen.

cookie #7 was an impulse buy made yesterday on our sunday grocery trip. i have been looking for a nice shortbread recipe - but unfortunately this one is not it. it is like a butter bomb in your mouth! tasty, but a little goes a loooooonnngg way!

i ended my baking day with #8 - another shortbread recipe i adapted from roll-out cookies to make into bars. it made rather thin bars in a 9x13 pan. i think i overbaked slightly because they turned out pretty crispy, but i was winging it on the amount of time to leave in the oven. this recipe is not inedible, just not one i will be making again....
