lemon lime cupcakes
(social distancing day 62, WFH day 43, at-home learning day 34)
i've had my eye on this recipe since i watched an episode of the pioneer woman a few weeks ago, and this week i finally put fresh lemon & lime on the grocery list. so there were no longer any excuse not to bake up some citrus goodness.

i was happy to be able to dust off two lesser-used tools from my collection of kitchen gadgets: meet my zester and my juicer.
i ended up with enough batter to fill nearly three 24-cup mini muffin pans. while the cupcakes were baking, i mixed together the glaze, which made about 3x the amount i needed. but don't worry: i stuck the extra in the freezer so i can make the batter again and have the glaze on standby. these little morsels sure are tasty and hard to stop eating!! mom's day

today we tried to make the best of another day at home. lunch was taken care of by a BOGO offer at one of our favorite eateries....so dad was off the hook for that one.
when he & the girls came back with lunch, they surprised me with two new plants to brighten my work-from-home surroundings. it's a great gift i can enjoy, and one that won't add inches to my waistline....;-) we sat outside to eat and enjoyed the nice spring weather.
i baked up some angel food cupcakes that i paired with whipped cream and strawberries for a yummy dessert that will no doubt last the rest of this week.

baking again

another new recipe tried today....and it turned out very well! i've never made scones, but they were fairly simple. the only special ingredients needed were mini chocolate chips and heavy cream, so once i got everything i was so excited to finally make them. i left off the glaze since i didn't want to make the scones too sweet. mmmmm - breakfast perfection!!

another day at the office
i have been going into the office on wednesdays only for 8 weeks now, and little sister went with me today. just for fun, we got to go 300 feet up onto the roof of the west tower. then around 11am, we went back up to see the blue angels flyover salute to all covid-19 responders. we were a little too far off the flight path, but it was still neat to see from up that high.
for lunch, we drove thru for chicken & fries and then went back to the cafeteria to eat. i think it was a nice change of scenery for little sister.

splash time
the girls got a little bit of social interaction today with a friend who has been in quarantine just as long as they have been. it was great to see then having so much fun and hear their laughter.
