lemon lime cupcakes

(social distancing day 62, WFH day 43, at-home learning day 34)
i've had my eye on this recipe since i watched an episode of the pioneer woman a few weeks ago, and this week i finally put fresh lemon & lime on the grocery list.  so there were no longer any excuse not to bake up some citrus goodness.
i was happy to be able to dust off two lesser-used tools from my collection of kitchen gadgets: meet my zester and my juicer.
i ended up with enough batter to fill nearly three 24-cup mini muffin pans.  while the cupcakes were baking, i mixed together the glaze, which made about 3x the amount i needed.  but don't worry: i stuck the extra in the freezer so i can make the batter again and have the glaze on standby.  these little morsels sure are tasty and hard to stop eating!!
